About The Author:

 

Hi! My name is Angie Alt. I’m a Certified Health Coach through the Institute for Integrative Nutrition.  Almost three years ago, after over a decade of becoming progressively more ill, I was finally diagnosed with my third autoimmune disease, Celiac Disease. It was an incredible break through moment for me.  I adopted the Autoimmune Protocol and experienced a miraculous turnaround. I threw myself into learning everything I could about real food, nutrition, and lifestyle changes to heal chronic illness.

I decided to write this book, with help from sister, Jenifer Beehler, to show others that healing with the Autoimmune Protocol does not have to be a miserable experience. I wanted to share the delicious food I eat and show others that despite the ups and downs of the journey, life on the other side is filled with possibility. Restoring my health has allowed me to focus on living a limitless life, despite a few food restrictions. I hope you’ll find it to be a valuable resource for your kitchen and your heart.

What recipes will I find in this book?

The Alternative Autoimmune Cookbook includes recipes that meet the standards of the full elimination phase of the Autoimmune Protocol, which means there are no grains, no dairy, no legumes (including peanuts & soy), no eggs, no nuts or seeds (including chocolate & coffee), and no nightshade vegetables (including tomatoes, white potatoes, eggplants, & hot & sweet peppers). There are also a few recipes from each of the four stages of the reintroduction phase of the Autoimmune Protocol and a few recipes without high FODMAP foods (foods with sugars that are highly fermentable by bacteria in our digestive systems). What gluten-free flours do you use in your recipes?

I use arrowroot, tapioca and coconut flour in this book.

What sweeteners do you use in your recipes?

I use honey, maple syrup, black strap molasses & turbinado (raw) sugar in this book.

Are there eggs in your recipes?

Egg are not used in this book.

Does this cookbook require a lot of skill in the kitchen or “fancy” ingredients?

There are recipes in the book that are a bit more complex in terms of prep work (peeling, chopping, mixing, etc.), but the vast majority are very simple and straight-forward. I am a typical home cook, so I haven’t written recipes for highly skilled chefs. There are some ingredients that might be viewed as unusual, but that are very normal parts of the Autoimmune Protocol, things like duck fat, collagen, elk meat, or huckleberries. I have pointed out substitutions where it is possible and provided an extensive resource list for sourcing these ingredients.

Is this book appropriate for the SCD diet, GAPS diet, or Low-FODMAP diet?

There are some recipes in this book that may be compatible with certain stages of these diets, but the requirements of those diets are not the focus of this book.

I’ve heard your book is more than recipes, what else is needed in a cookbook?

There are so many sensitive issues that come up when a person undertakes an approach to healing that involves food and lifestyle changes. A healing protocol cannot be honestly explored without touching on more than recipes. So much happens when we change our food and I wanted to write about those topics . . . things like balance, body image, cheating, forgiveness, and the stages of grieving.
